Spring Menu Debuts at db Bistro Moderne
Spring is here and one of our favorite parts about the change in season is the change in menus. Spring menus in Miami mean fresh ingredients and vibrant colors and Chef Clark Bowen’s new menu at Daniel Boulud’s dbBistro Moderne was as beautiful to behold, as it was to taste.
Last week we highlighted spring cocktails and now we are ready to dive into the fresh flavors in food that spring has to offer. Our first peek of a new spring menu was at the db Bistro Moderne Menu Preview at the JW Marriott Marquis in downtown Miami.
I was invited in to sample the new menu and some of the new cocktails - I knew it would be a meal I didn’t want to miss.

As expected everything was delicious. All of the cocktails were very springy and refreshing and the canapés were a wonderful way to start the evening.
Dinner was paired three different wines - starting with a Rose and working our way into a lovely light red wine. The wine selection was made by db Bistro’s new Sommelier, Haunah Klein, who I’m convinced I could become best friends with.
The Caribbean Lobster was fresh and light; while the Corn Ravioli had me wishing the plate was 10x bigger because I wanted so much more.
My favorite of the night was the Lamb Duo - it was a picture perfect painting of spring and was everything I wanted in the main course.
The desserts were absolutely worth waiting for. Even those who shared a table with me who are “typically not dessert people” were raving over the Pistachio Panna Cotta and the Strawberry Cream Puffs. In true db Bistro tradition, dinner was ended with their fresh baked warm madeleines and a major food coma.
