Divino Ceviche Delights Palettes with Peruvian-Japanese Cuisine
Peruvian cuisine is constantly on the move and keeping our appetites on edge. At Divino Ceviche, Chef Christian Encalada is inspired by the Nikkei movement of Peruvian-Japanese to create dishes beyond the expected Peruvian menu.
Each plate highlights the unique characteristics of the seafood. You’ll find salmon in a contrasting citrus sauce; tuna bathed with flavors from the mussels; and breaded shrimp with creamy sweet potato.
These creations opened the window to all that is offered at this location in Coral Gables. And with an outdoor seating area right on Giralda Avenue, we enjoyed a surprisingly breezy evening in South Florida.
We were invited to dine at Divino Ceviche in celebration of the 8th Annual Peruvian Gourmet Gastronomic Event, and to get a taste of the special festival menu. As soon as we sat down, the server brought over crispy sweet potato chips with a side of toasted kernels.
The first dish we tried from the festival menu was the Ceviche Salmon con Chicharron de Scallops. The salmon ceviche held its own in the center of the plate. Then large white corn and chunks of sweet potato rested in a leche de tigre huancaina sauce. We enjoyed the creaminess of the salmon and citrus-forward taste the most in this dish.
Next up, we shared the Ceviche de Mahi Mahi. The leche de tigre sauce got its color from the mint and aji amarillo, while a splash of Fanta orange soda gave it sweetness. Surrounding the mahi mahi ceviche, the breaded shrimp absorbed the zest from underneath.
Then came the Roll Acevichado aka the ceviche roll. The center of this roll had breaded shrimp, avocado and sweet potato. With the white fish on top and ivory acevichado sauce, it was like ceviche all in one bite.
