Chef Richard Hales: March of Dimes Chef Culinary Captain
As Culinary Captain for next Wednesday, November 7th’s 21st Annual March of Dimes Signature Chefs Auction event, Chef Richard Hales will be joined at the Paradise Plaza Event Space in the Design District by more than 15 local chefs who have donated food and their time in support of The March of Dimes, the non-profit organization that works on funding research for the prevention of birth defects.
Chef Hales who was born in New Orleans, raised in Tampa, and honed his culinary chops in New York City has been one of Miami’s favorite chefs for many years. His Sakaya Kitchen, which opened in 2009 has been a mainstay for fast casual Korean-style dining. Blackbrick, which opened in Midtown in 2013 is known for creative Chinese food with a Florida twist and was named one of the Top 50 New Restaurants by Bon Appetite in 2014. And Dim Saam a Go-Go, his food truck, continues to make its catering rounds to both private homes and public festivals.
His latest food residence is at The Confidante Hotel, where his Bird and Bone has established itself as THE non-hotel hotel dining spot. Garnering reviews for his comfort food like Hot Nashville Fried Chicken, Shrimp and Grits, Southern Style Sunday Brunch and probably the best burger in Miami, Chef Hales has a kitchen crew he is proud of and a supportive local following.
A regular on TV, he counts Guy Fieri among his friends having appeared with him on numerous shows including Food Network’s Drive ins, Diners and Dives, Guys Grocery Games, plus appearing on Americas’ Best Bite, 24-hour Layover with Anthony Bourdain, and Fast Casual Nation.
Philanthropy is not new for Chef Hales, who upon appearing on Food Networks Beat Bobby Flay donated the entire winnings to charity.
Chef and his wife Jenny also support personally or through their restaurants, No Kid Hungry, Lotus House Shelter for Women and Children, St Jude's Hospital and Special Olympics.
At last year’s March of Dimes event, Chef Hales offered a Cook Your Catch deep sea fishing trip that included a half day fishing with Chef, and then a lunch of your freshly caught fish prepared by Chef Hales and his culinary team. It was one of the most popular auction items, and I can personally vouch for the fishing experience as my husband was the high bidder and took 2 friends and our son on the experience, who we then fondly nicknamed the “Reel Men of Miami”.
